Easy Hamburger
       VEGETABLE SOUP                                        INGREDIENTS

                                                             •
                                                                1 lb hamburger
                                                             •   2 tbs Olive oil
                   SERVINGS                                  •   1 small onion, diced
                   8 servings                                •   2 stalks celery, sliced small
                                                             •   2 carrots, sliced small
                   PREP TIME                                 •   1 medium potato, diced
                   5 minutes                                 •   1 can corn, drained
                   COOK TIME                                 •   1 can peas, drained
                   10 minutes                                •   1 can green beans, drained
                                                             •   2 cans diced tomatoes, not drained
                                                             •   3 cups beef broth and water if needed for more
                                                                broth
                                                             •   1 tsp salt
                                                             •   ¼ tsp pepper
                                                             •   1 tsp garlic powder
                                                             •   1 tsp Italian seasonings
                                                             •   1 bay leaf


                                                             OPTIONAL INGREDIENTS:

                                                             •   1 can favorite beans: great northern,
                                                                garbanzo, or black.
                                                             •   Chopped cabbage and/or small
                                                                zucchini, diced.
                                                             •   Orzo pasta


                                                         DIRECTIONS

                                                         1.  Brown ground beef and drain- set aside.
                                                         2.  Sauté onion, carrots, and celery in olive oil until onions
                                                             are translucent.
                                                         3.  Add in all other ingredients.
                                                         4.  Simmer 30 minutes or until carrots are done.
                                                         5.  Remove bay leaf before serving.
